
HISTORY
The Worcester family
butterscotch recipe came from an English mail order catalog published
in
the mid-nineteenth century.
INGREDIENTS
We still make the
candy
with the same original five ingredients; pure cane sugar, Grade AA
creamery
butter, fancy unsulphured molasses, a dash of secretly flavored apple
cider
vinegar and salt.
COOKING &
"MANUFACTURING"
Zeke's is cooked in
small batches on a stovetop. Each batch of 'hotmix' is poured
into
standard baking trays to cure overnight. The cured slabs are then
turned out onto a screened surface and the candy is cracked -by hand-
with
the butt end of a pair of regular table knives. The screened
candy
is then sprinkled with pure cane confectioner's sugar and scooped into
your container.
STORAGE
Zeke's Butterscotch
is literally a VERY fresh candy, and, it is LOADED with real creamery
butter.
There are no preservatives in Zeke's other than apple cider vinegar,
which
acts as a preservative. Kept in a cool, dry place, Zeke's will
still
taste fine 6-12 months after purchase ('though not near as
good...).
The beauty of Zeke's is that it turns soft, chewy and juicy in your
mouth,
unlike all other butterscotch candies. It's the heat and moisture
of your mouth that does it. Heat, and moisture/humidity in
storage
will not spoil the candy, but it will cause it to stick together into
big
chunks, making it a heck of a job to get a bite-sized piece. We
recommend
you put out a little at a time in a nice candy dish and keep the rest
closed
up real tight in a cool dry place. If it sticks together,
an
impact device (read: hammer) of your choosing is guaranteed to do the
job.
We realize there's at least 1 or 2
reasons
to store Zeke's for longer than a few weeks. Cool & dry is
best.
REFRIGERATORS: too moist! FREEZERS: for longer term storage (1
month
to a few years!) - be sure to double/triple wrap!
